At the same time, it protects our industries while keeping our culinary heritage intact. By its tradition and authenticity, the guarantee of quality allows the product to be identified as coming from the local area. This is official recognition in the world of food.

Products are required to meet certain specifications:
• manufacturing specifications,
• typical, traditional characteristics that are representative of a region
• characteristics specific to their origin.
Genuine Morteau sausage
In the living room the “Tuyé”, the insolent thing, will only accept the smoke of fragrant pine. Three months later, here it is at last, ready to tickle your palate. No doubt about it: for “top” people, nothing could be more authentic. Let us feast royally on “Belle de Morteau”.

In the 19th century, small producers began making Morteau sausage, following ancestral country traditions. Part of the region’s culinary heritage, in 1977 Morteau sausage was awarded the Franche-Comté regional label of quality.
This label is the proof and guarantee of a genuine Morteau sausage:

Origin : made in the Jura Massif area, in a traditional farmhouse with a “tuyé” fire, at an altitude of over 600 m, with conifers

Tradition : slow curing over conifer sawdust in a “tuyé” for at least 48 hours.

Quality : prepared solely from a mixture of lean and firm fat pork and natural additives.

Official inspection : identification of the product all the way through the process by means of an efficient traceability system.
Genuine Montbéliard sausage
First made in the 14th century, Montbéliard sausage was awarded its label in 1992. Made from top quality pork, obtained from pigs fattened in Franche-Comté, Montbéliard sausage is smoked over conifer sawdust (fir, spruce, juniper) according to the traditional method.
